I hope everyone is having a great fall so far. One of my favorite things about fall is all the colors. Not only are the trees colorful, but the food is colorful too. Fall crops provide a rainbow of colors with everything from orange squash to purple rutabaga! I put together a few of my favorite classic and unconventional recipes that I thought personified the taste of fall.
Vegetarian Recipes: Squash the Beef
Fall is one of the best seasons for vegan and vegetarian recipes because all the crops are being harvested. Some of my favorite crops to use are: Fennel, Okra, Squash, Kohlrabi and even sunflowers! Squash is one of the most abundant crops during the fall and is great for making hot soups, lasagna, or pie. I love these vegan and vegetarian squash recipes.
Vegetarian Recipes: Just Leeked
Leeks are another great veggie to use when it comes to making fantastic fall recipes. They go great with almost anything! You can put them in soup, pudding, mac n’ cheese; the possibilities are endless. This leeks in oatmeal cream recipe is a little unconventional, but it’s definitely creative.
Best of both worlds: Vegan and Vegetarian Recipes
When the weather starts to get chilly you can always stay warm with some chili. Check out this great recipe for vegetarian chili. If you want to get a head start on your meals you can always make one giant batch at the head of the season and freeze them for later; use them on those days when you just don’t feel like cooking.
