Cod Fish

Spring is the perfect time to get moving! One of my favorite things about spring is the fresh food. I love heading to the Farmers Market and picking up new ingredients to try in my cooking. This year’s selection of goodies has been great so far. Take a look at what’s cooking with a few of my favorite spring recipes!

Looking to switch things up a bit? How about this new take on the French fry? The crispy asparagus fry doesn’t sacrifice taste for health. Delicious and healthy and fun to eat. That’s a win, win, win! Take things to the next level with this strawberry bbq chicken salad. It’s got the best of both worlds. Salty and sweet and oh what a treat. Mix in the bacon, quinoa, and goat cheese and you’ve got a party in your tummy! This cucumber feta rolls recipe is a great combination of light and crunchy. Plus they’re really good with pita chips.

Spring Recipe: Shrimp

This cod in potatoes recipe is a healthier alternative to fish n’ chips. It opts for baking instead of frying. Lay it on a bed asparagus and voilà, instant spring recipe! For kicks, throw in some pesto grilled shrimp. Made with parmesan, lemon juice, and garlic, this pesto will give your shrimp that extra zest it needs. This springtime minestrone recipe takes a while to get cooking (6-8 hours), but good things come to those who wait. And mmm it sure is good!

Spring Recipe: Sticky Buns

This interesting take on a Greek yogurt fruit parfait uses: peaches, plums, almonds, rice cereal, and agave nectar! That’s got delicious written all over it. One of my absolute favorite spring recipes is for these raspberry sticky buns. Sweet, fresh, and great with a cup of coffee or tea. They’re the perfect treat to enjoy out in the garden on a lovely spring morning. With just the right blend of tart and sweet, this recipe for a pink lemonade ombre cake will have you running back for seconds faster than you can say its name.
